I haven’t been home a whole heck of a lot this summer. My two jars of sourdough starter have been waiting in the fridge patiently. I pulled them out this morning to give them a re-feed (look at me talking all sourdough lingo haha!).
I absolutely hate food waste. I did have an issue with this when I started my first batch of starter because I did not want to throw out all that precious flour. It was very precious back in March and April indeed! I managed to get away with not doing any discarding but feeding with some experimenting. Anyway, I digress.
I had two cups of discard today, so I googled some recipes. My family loves chocolate chip cookies. I looked at quite a few before settling on this one. I liked it simplicity. I doubled the batch because if I’m going to pull out all the stuff and make the effort – may as well make enough to make it worth while. I ended up with a big batch and it used all two cups of my starter discard. So bonus!
Also, I’m going to let you in on a little secret. The batter tastes like shit – haha – ok that’s an exaggeration. But its got that sourdough, yeasty kind of taste – so it was an excellent deterrent for me. Usually, I eat my weight in gold in cookie dough!
I may have sampled a couple. They are very cake like. Soft. I’ll be interested to see if they stay this way – before they are all gone that is. The ones with the cornstarch usually lose their softness after a while.
I will leave you with a picture of my own that I took. This is before everyone gets home. I’ll be sure to give an update on what the family thinks once they have had a chance to devour a few. I’m sure they will get rave reviews.
